Roasted Garlic Hummus

Roasted Garlic Hummus

Seriously the BEST roasted garlic hummus. Packed with flavor from two whole heads of roasted garlic, it’s insanely delicious and the perfect dip.

Roasted garlic hummus topped with fresh parsley, olive oil and sesame seeds in a ceramic bowl.

This roasted garlic hummus is so easy and delicious.

It’s made with two heads of roasted garlic for the most delicious flavor.

Roasted garlic in itself is a dreamy thing. Roasting garlic takes all the bite out of garlic, leaving behind only the pure deliciousness of the garlic flavor.

Blended into hummus, roasted garlic takes regular hummus and catapults it up several notches on the yum scale!

We’re big fans of hummus, which is why we’ve already made a classic hummus recipe, a roasted red pepper hummus and a roasted butternut hummus. Oh yeah!

You might think that using two whole heads of roasted garlic equals an overpowering garlic flavor but that isn’t the case at all.

The flavor is still subtle. It’s rich and delicious but it’s not at all overpowering.

Roasting the garlic takes the bulk of time in this recipe, once the garlic is roasted, then it’s just a case of throwing everything into the food processor and a couple of minutes later you have hummus!

Vegan Enchiladas

Vegan Enchiladas

These vegan enchiladas are the best! Stuffed with butternut squash and black beans, topped with tomato sauce and the cheesiest vegan cheese sauce!

Vegan enchiladas topped with cheese sauce and chopped cilantro in a white dish.

Up until a few years ago I thought enchiladas were some sort of noodle thing.

I’m pretty sure I had them confused with cannelloni.

They are actually tortillas stuffed with a delicious filling, topped with tomato sauce and cheese and then baked in the oven for 20 minutes.

So…sort of similar to a cannelloni type deal but not the same.

They are really simple to throw together, but not quick. There are a few steps involved, but they’re all really easy and fun. It’s the perfect meal to throw together for a family dinner, especially if there are a few people to help out with preparing it.

And if you love these enchiladas you’ll likely also love our vegan quesadillas and vegan fajitas!

Vegan Apple Pie

Vegan Apple Pie

This vegan apple pie is absolutely the best pie you’ll ever make. It’s bursting with flavor from lightly spiced apple filling set between layers of flaky crust.

I have been daunted by the prospect of making a vegan apple pie for YEARS now. I made a vegan apple crisp, vegan apple cake and vegan apple muffins but I steered clear of apple pie.

I had an idea that it would be really hard to make. Boy was I wrong about that!

There are approximately 55 million process photos in this recipe (small exaggeration), so that might make it seem like it is difficult, but really, it’s not.

There are a few steps involved, and you’ll make good friends with your rolling pin, but it’s actually super easy. It’s not that quick, but it is easy.

Homemade Cashew Butter

Homemade Cashew Butter

Make the most delicious homemade cashew butter with this easy 2-ingredient recipe. It’s rich and super creamy, and ready in 10 minutes.

Cashew butter in a glass jar with a spoon.

Wanna make your own homemade cashew butter? It’s too easy.

It’s just 2-ingredients and about 10 or so minutes and you have beautifully creamy cashew butter.

Of course it’s super easy to just go and buy a jar of cashew butter at the store, but the benefits of making your own are that you can save money and also that you get a really fresh and delicious batch of nut butter. It really does seem to taste so much better than what you can buy in the store.

We love making our own nut butters, check out our homemade peanut butter and homemade almond butter recipes too.

This vegan tiramisu is amazingly delicious and super fun to make!

Note: I said ‘fun’ and not ‘quick’.

It’s layers of vanilla sponge cake, soaked in kahlua spiked coffee syrup, topped with a cashew ‘mascarpone’ and coconut whipped cream. It’s creamy dreamy boozy bliss.

It’s also a perfect make-ahead dessert because it’s at its best the day after making it.

Avocado Hummus

Avocado Hummus

This avocado hummus is creamy and smooth and totally delicious. It’s super easy to make, highly nutritious and makes a perfect dip or spread!

Avocado hummus topped with black sesame seeds, olive oil and chopped parsley in a black bowl.

This avocado hummus is so deliciously rich and creamy! The look is closer to guacamole but the taste is pure hummus with a touch of amazing.

It’s crazily easy to make, you just make hummus and then add avocado.

We were actually eating this for a while before we actually made an ‘official’ batch of avocado hummus.

Basically we would just spoon some hummus into our mashed avocado. It made the avocado go further as well as adding in some protein to the dish.

Making your hummus like this from the start though works better as you get the perfect mix of flavors.

This recipe is based on our classic hummus recipe with just a few small changes.

Vegan Buddha Bowl

Vegan Buddha Bowl

The best vegan buddha bowl with quinoa, crispy tofu, roasted butternut squash and broccoli and topped with the best tahini dressing.

Quinoa, tofu and vegetables in a blue bowl.

What is a Buddha Bowl?

The idea with a buddha bowl is to pile your bowl so full of things that it is nice and round on top, like a buddha belly.

Truly an awesome concept don’t you think?

I’ve also heard of them being called ‘hippie bowls’ hahaha.

Now, depending on the size of your bowl, maybe you don’t want to pile it that high on top, but you do want to have something in the center, like quinoa or couscous or brown rice.

And then you pile a selection of veggies and salad around the sides along with a protein source like tofu or chickpeas.

And of course you need a dressing too.

When you have all these elements, it doesn’t matter what you call it, a vegan buddha bowl or a hippie bowl or whatever, what it really is, is a super healthy and delicious meal.

For these vegan buddha bowls we chose quinoa for the middle, a delicious stir fried tofu for the protein, roasted butternut squash and broccoli for the veggies, cilantro, chopped cherry tomatoes and sliced avocado for the salad and a fabulous tahini dressing for the topping.

If you love these bowls you’ll also love our vegan poke bowls so check those out too.

This teriyaki tofu is made with a deliciously sweet and salty homemade teriyaki sauce. It’s super quick and easy and better than takeout!

There is a lot to love about this teriyaki tofu. It’s packed with flavor: salty and a little sweet, and it comes together super fast.

Served with rice it’s a fabulous high protein meal that’s perfect for weeknights.

And if you love tofu like we do, then also check out our baked tofu recipe, our crispy fried tofu and our marinated tofu salad.

Vegan Eggplant Dip

Vegan Eggplant Dip

This vegan eggplant dip is made with roasted eggplant and tahini for a delicious dip or spread. Delicious served with pita breads or veggies.

Eggplant dip topped with chopped parsley and smoked paprika in a black bowl.

This vegan eggplant dip is totally delicious.

I feel like it’s more the sort of dip for raw veggies and pita breads than it is for chips but maybe that’s just a matter of preference.

Making this dip is really easy, not super quick, but definitely easy. The time consuming part is baking the eggplant for 45 minutes and then letting them cool enough so you can scoop out the insides. But once that is done, you are minutes away from being ready to serve it.
