Roasted garlic in itself is a dreamy thing. Roasting garlic takes all the bite out of garlic, leaving behind only the pure deliciousness of the garlic flavor.
Blended into hummus, roasted garlic takes regular hummus and catapults it up several notches on the yum scale!
We’re big fans of hummus, which is why we’ve already made a classic hummus recipe, a roasted red pepper hummus and a roasted butternut hummus. Oh yeah!
You might think that using two whole heads of roasted garlic equals an overpowering garlic flavor but that isn’t the case at all.
The flavor is still subtle. It’s rich and delicious but it’s not at all overpowering.
Roasting the garlic takes the bulk of time in this recipe, once the garlic is roasted, then it’s just a case of throwing everything into the food processor and a couple of minutes later you have hummus!
Vegan Enchiladas
These vegan enchiladas are the best! Stuffed with butternut squash and black beans, topped with tomato sauce and the cheesiest vegan cheese sauce!
Up until a few years ago I thought enchiladas were some sort of noodle thing.
I’m pretty sure I had them confused with cannelloni.
They are actually tortillas stuffed with a delicious filling, topped with tomato sauce and cheese and then baked in the oven for 20 minutes.
So…sort of similar to a cannelloni type deal but not the same.
They are really simple to throw together, but not quick. There are a few steps involved, but they’re all really easy and fun. It’s the perfect meal to throw together for a family dinner, especially if there are a few people to help out with preparing it.

This vegan apple pie is absolutely the best pie you’ll ever make. It’s bursting with flavor from lightly spiced apple filling set between layers of flaky crust.
I have been daunted by the prospect of making a vegan apple pie for YEARS now. I made a vegan apple crisp, vegan apple cake and vegan apple muffins but I steered clear of apple pie.
I had an idea that it would be really hard to make. Boy was I wrong about that!
There are approximately 55 million process photos in this recipe (small exaggeration), so that might make it seem like it is difficult, but really, it’s not.
There are a few steps involved, and you’ll make good friends with your rolling pin, but it’s actually super easy. It’s not that quick, but it is easy.

Of course it’s super easy to just go and buy a jar of cashew butter at the store, but the benefits of making your own are that you can save money and also that you get a really fresh and delicious batch of nut butter. It really does seem to taste so much better than what you can buy in the store.

Vegan Tiramisu
This vegan tiramisu is rich and decadent and insanely delicious. It’s perfect as a make-ahead dessert option and the only tiramisu recipe you’ll ever need.
This vegan tiramisu is amazingly delicious and super fun to make!
Note: I said ‘fun’ and not ‘quick’.
It’s layers of vanilla sponge cake, soaked in kahlua spiked coffee syrup, topped with a cashew ‘mascarpone’ and coconut whipped cream. It’s creamy dreamy boozy bliss.
It’s also a perfect make-ahead dessert because it’s at its best the day after making it.
Vegan Blueberry Pancakes
The best ever vegan blueberry pancakes. Thick and fluffy and packed with blueberries. Also super easy and made in one bowl!
I’m in love with these vegan blueberry pancakes. They are deliciously light and fluffy, filling and satisfying!
The blueberries add so much flavor and deliciousness.
They’re perfect for breakfast of course, or dessert for that matter!

Avocado Hummus
This avocado hummus is creamy and smooth and totally delicious. It’s super easy to make, highly nutritious and makes a perfect dip or spread!
This avocado hummus is so deliciously rich and creamy! The look is closer to guacamole but the taste is pure hummus with a touch of amazing.
It’s crazily easy to make, you just make hummus and then add avocado.
We were actually eating this for a while before we actually made an ‘official’ batch of avocado hummus.
Basically we would just spoon some hummus into our mashed avocado. It made the avocado go further as well as adding in some protein to the dish.
Making your hummus like this from the start though works better as you get the perfect mix of flavors.
This recipe is based on our classic hummus recipe with just a few small changes.
Vegan Buddha Bowl
The best vegan buddha bowl with quinoa, crispy tofu, roasted butternut squash and broccoli and topped with the best tahini dressing.
What is a Buddha Bowl?
The idea with a buddha bowl is to pile your bowl so full of things that it is nice and round on top, like a buddha belly.
Truly an awesome concept don’t you think?
I’ve also heard of them being called ‘hippie bowls’ hahaha.
Now, depending on the size of your bowl, maybe you don’t want to pile it that high on top, but you do want to have something in the center, like quinoa or couscous or brown rice.
And then you pile a selection of veggies and salad around the sides along with a protein source like tofu or chickpeas.
And of course you need a dressing too.
When you have all these elements, it doesn’t matter what you call it, a vegan buddha bowl or a hippie bowl or whatever, what it really is, is a super healthy and delicious meal.
For these vegan buddha bowls we chose quinoa for the middle, a delicious stir fried tofu for the protein, roasted butternut squash and broccoli for the veggies, cilantro, chopped cherry tomatoes and sliced avocado for the salad and a fabulous tahini dressing for the topping.
